Items that were once staples of the American diet since the mid-twentieth century have become offensive, as knowledge improves about what is good for our bodies and what is not. Consumers have learned that beverages can be healthy, functional and low in calories while still maintaining their thirst-quenching appeal. Sugary, high-calorie beverages continue to decline year after year, while naturally sweetened, lower calorie beverages report multiple digit increases. Consumer tastes have gone back to basics with few and natural ingredients and easy to understand labeling. But while they want more basic ingredients, consumers also look for more functional ones, including vitamins for obvious health benefits, herbs for mental well-being, amino acids for recovery, protein for weight management and even caffeine for energy.

Maletto made note of echinacosdes, natural phenols, which he described as “a mainstay from the 70s.” And he named goldenseal “a big one” especially because of the alkaloid it contains, berberine. “The raw herb doesn’t do as much,” Maletto said. “It needs to be concentrated, extracted. I actually work on delivery systems, using coding, emulsification, nano technology and the micronizing of ingredients.” He also recommended citrus bergamot in the form of an essential oil for reducing cholesterol as well as turmeric in soft gel capsules for its anti-inflammatory properties.

For those not following carbohydrate-restricted diets, supplementation of clinically studied herbal extracts and natural compounds that can easily prevent deadly advanced glycation end products (AGEs) associated with an aging endocrine system that cause cellular damage has been bigger than ever,” Maletto said. AGEs are created through the Maillard reaction, the interaction of glucose and the unfolding proteins through a specific kind of chemical reaction that is similar to overcooking steak in the kitchen, Maletto continued. “These reactions are very dangerous in human tissues, where AGEs produce powerfully destructive oxidative stress and inflammatory conditions that lead to atherosclerosis (plaque buildup in the arteries) and fatal diseases.

Brands are constantly adapting product formulations to accommodate the latest trend or fad. PTM’s Pete Maletto & Ryan Dolan were recently featured in an article by Caitlin Dewey exploring why unhealthy sources of processed fat have creeped back into new product launches. Whatever the cause, experts agree the report’s findings show how difficult it can be to improve packaged foods. That’s why Ryan Dolan and Pete Maletto, PTM’s president, encourage companies to consider the entire product during reformulations, rather than specific ingredients, such as sugar.

The best way to develop a nutritious product, they argue, is to focus on using fewer ingredients and moderate amounts of salt, sugar and fat. “Otherwise, at the end of the day, you’re just exchanging one bad ingredient for another,” Maletto said. “And consumers don’t think like that anymore. It’s a different world.”
